
Made to celbrate Pi day!
Ingredients
- 1 recipe for prebaked pie shell just out of the oven when the filling is ready
Filling
- 6 tbls (83g) unsalted butter
- 1 cup dark brown sugar
- 1/2 tsp salt
- 3 large eggs
- 3/4 cup light corn syrup
- 1 tbls vanilla extract
- 2 cups picans toasted and chopped into small pieces
Directions
- melt butter in baño maria with water just below simmer
- stir in sugar and salt until absorbed
- beat in eggs, corn syrup and vanilla
- return to baño maria and heat until 130ºF
- remove from heat and stir in pecans and add to pie crust
- bake at 130ºC until set 50 - 60 minutes
