Recipe: Pican Pie

Made to celbrate Pi day!

Ingredients

  • 1 recipe for prebaked pie shell just out of the oven when the filling is ready

Filling

  • 6 tbls (83g) unsalted butter
  • 1 cup dark brown sugar
  • 1/2 tsp salt
  • 3 large eggs
  • 3/4 cup light corn syrup
  • 1 tbls vanilla extract
  • 2 cups picans toasted and chopped into small pieces

Directions

  1. melt butter in baño maria with water just below simmer
  2. stir in sugar and salt until absorbed
  3. beat in eggs, corn syrup and vanilla
  4. return to baño maria and heat until 130ºF
  5. remove from heat and stir in pecans and add to pie crust
  6. bake at 130ºC until set 50 - 60 minutes
